corn muffins

I love making these corn muffins for my family! They can be served as quick snacks or as a bread replacement for lunch or dinner meals. My homemade corn muffins are moist and tasty and take very little time to prepare and bake!

Makes 12 muffins

 

Ingredients:

2 cups all purpose flour

1 cup yellow cornmeal (not cornmeal mix)

1 ¼ tsp baking powder

¾ tsp baking soda

¼ tsp of salt

1 cup of sugar

1 cup of milk

16 tbsp (2 sticks) unsalted butter, melted

2 large eggs

 

1..  Heat oven to 400 degrees and adjust oven rack to middle position. Oil 12 cup muffin pan with cooking spray.

2.. In a large bowl, whisk flour, cornmeal, baking powder, salt and sugar in a large bowl. In a separate bowl, (in this order) add the melted butter, milk and eggs then mix until smooth. Fold in butter mixture with flour mixture until combined, do not over mix.

3. Portion batter into greased muffin cups. Bake until golden brown 15 to 20 minutes.

4. Let muffins cool for about 15 minutes before serving.

Muffins can be served warm or at room temperature.  Enjoy!
