Sometimes you just want a protein based meal you can eat as a sandwich or enjoy alone. This tasty black bean burger is the perfect beef alternative for your taste buds. Enjoy with a side of baked zucchini fries for a complete meal.

Black Bean Burger 

Serves 2 to 4

Time: 15 to 30 minutes


Ingredients Needed

½ cup or more of herbed bread crumbs

1  (15 ounce) can black beans, rinsed

1 tbsp ground chia seeds

3 tbsp water

1 tsp chili powder

½ red bell pepper, chopped

1 small onion, chopped

1 tsp minced garlic

1 tsp oregano

1 tsp ground coriander

1 tsp of olive or grapeseed oil.

Salt and pepper to taste

Directions

  • Place beans in a food processor and blend until almost smooth. In a separate bowl, whisk the chia seeds and 3 tablespoons of water together until it forms the appearance of an egg. Then add the oil along with the coriander, chili powder, oregano, salt, and pepper.

  • Stir the breadcrumbs, chia mixture, beans, chopped red bell pepper, chopped onions, minced garlic until combined. Divide the mixture into 2 to 4 portions and shape into patties.

  • Spray skillet with non-stick cooking spray (or lightly oil pan) and heat over medium heat. Carefully lay patties on the skillet and cook for 8 to 10 minutes until well browned. Enjoy!
