Baked Zucchini Fries | Healthy Vegan Meals

If you are tired of basic homemade potato fries and would like to try something new. These baked zucchini fries will not let you down. Best of all, it is perfect as a side dish and rated very easy to make. 

Baked Zucchini Fries

Serves 4

Total Cook Time: 35 minutes

Ingredients Needed

3 zucchini, cut into long strips

½ cup herbed breadcrumbs

1 cup cornmeal

1 tsp garlic powder

1 tsp sea salt

¼ tsp pepper

½ tsp chili powder

1 tsp ground chia seeds


Heat oven to 450 degrees then cover the baking sheet with aluminum foil then spray with cooking oil. Mix bread crumbs and cornmeal together in a shallow dish.

In a separate small bowl, mix garlic powder, sea salt, pepper, chili powder together. In a medium bowl, mix chia seeds and enough water to together until it is almost soup like.

Season zucchini with garlic mixture then working in small batches dip seasoned zucchini into chia mixture, shake to remove excess, then roll zucchini into bread crumb mixture to coat. Transfer coated mixture to baking sheet.
Bake Zucchini in preheated oven until golden brown turning once for 20 to 25 minutes.
