This recipe reminds of eating baked sweet potatoes but the maple syrup takes it to the next level with the right amount of sweetness. There is not much more to say than SECONDS PLEASE!
Acorn Squash Recipe | Baked Maple Glazed
Prep Time: 10 minutes
Cook Time: 40 minutes
2 small acorn squash halved and seeded
1 teaspoon of coconut oil
1/2 cup of maple syrup
1/2 teaspoon of ground cinnamon
1/6 teaspoon of ground nutmeg
Pinch of salt
- Adjust oven rack to middle position and heat oven to 400 degrees Fahrenheit. Line a baking sheet with aluminum foil and spray with non-stick cooking spray. Brush cut side of squash with coconut oil and lay cut side down on baking sheet. Roast until flesh is tender about 35 minutes then remove from oven.
- In a small bowl whisk maple syrup, cinnamon, nutmeg and salt in a small bowl. Flip squash over then make several slits in squash (making sure not to cut a hole through flesh). Pour maple glaze evenly into both squashes. Continue to roast until caramelized about 5 to 10 minutes. Remove from oven.
